Method and Steps for Cooking Di San Xian

Prepare the ingredients. Cut the potato, eggplant, and green pepper into chunks. Slice the scallions, ginger, and garlic.

Coat the eggplant chunks with cornstarch evenly, then deep fry them in oil until they change color. Remove and set aside.

Fry the potato chunks for 3-5 minutes. Frying them a bit longer enhances the taste

Fry the green pepper for 20 seconds, then remove from the oil. Fry them for a shorter time
